Brunch Baked Eggs Recipe

With only three ingredients you probably already have in your kitchen these easy Brunch Baked Eggs are so easy to make for a special brunch celebration, weekend breakfast or weeknight dinner! Shop our party pantry to pickup a jar of our classic store favorite Mild Salsa.
Makes 6 Servings
Ingredients
- 2 cups finely shredded cheddar cheese
- 2 cups Mild Salsa or any Salsa
- 6 eggs
- Salt and pepper
- Cooking spray
- Preheat oven to 350° F.
- Spray 6 ramekins or custard cups with cooking spray. Sprinkle 1 Tablespoon cheese in the bottom of each ramekin.
- Place a spoonful of Mango Salsa over the cheese. Crack one egg over the salsa. Season with salt and pepper.
- Place another spoonful of salsa over the egg and sprinkle with more cheese.
- Bake for about 20 minutes or until eggs are set.
