Mexican Grilled Cheese
Perfect for a delicious lunch on the weekend or a quick dinner during the week Mexican Grilled Cheese is a fun twist on the traditional.
Ingredients
- 2 ripe avocados, peeled and pit removed
- 1/4 cup Mild Salsa
- 8 slices white peasant bread
- 2-4 Tablespoons light olive oil or melted butter
- 2 medium tomatoes, thinly sliced
- 8 slices apple wood smoked bacon, cooked
- 12 ounces Monterey Jack cheese, sliced
Directions
- Mash the avocado in a medium bowl. Add the salsa and mix.
- Place bread slices on a clean work surface. Spread the avocado mixture over four slices of bread (reserve remaining avocado spread to serve on the side with the sandwiches). Top each with tomato slices, bacon and cheese. Finish with another slice of bread. Butter or oil each outer side of bread.
- Saute sandwiches over medium heat until golden brown on both sides and the cheese is melted (a Panini maker can also be used). Cut sandwiches in half and serve.
